Hodde Kristian There are not many places left in Denmark, where you still make cheese by hand, but we do, because we believe you can taste the difference. Hodde Kristian is made of biodynamic hay-milk, where the cows have been on grass all summer and in winter, their main feed is hay with herbs. The cheese matures for at least 8 months, but the longer the better. In 2012, Hodde Kristian won the European Biocauses award for best organic cheese in its category. It is a hard yellow cheese, similar to a parmesan in taste and texture, but with a creamy taste of sour lemon and hazelnut. Matured: 8-10 months. Flavour: Taste notes of lemon and hazelnut. Consistency: hard yellow cheese.
